Cute Crustless Sammies

Mini Thor was recently diagnosed with a diary allergy so we have made a few adjustments in the way we eat. We have lots of recipes to share and we are going to get the party started with this fun dairy free idea we just love..Cute Crustless Sammies! It’s a tasty and fuss-free kid favorite whether you have allergies to worry about or not. Kids love fun shaped foods!

Here’s what you need…
– Whole Wheat Tortillas
– Peanut Butter (or your kiddos favorite nut-butter, like almond butter)
– Cute Cookie Cutters. We used a shark and a fish this time.

The How-To:
These are quick and easy! Just use the cookie cutter to cut 2 of each shape you are using.

Spread a thin layer of peanut butter (or other nut butter) on one tortilla and then add the other as the top and you’ve got the cutest little sandwich ever!

Pair with fruits and veggies and you have a tasty dairy-free meal for your little one!

These sammies are simple to make and will surely bring smiles! Using a wheat tortilla means no crust and no crumbs, plus you’re sneaking in some whole grain, and that means happy kids and happy moms! We hope you try them and love them as much as we do!

Pitas to Personal Pizzas!

We all have those nights when we need supper to be something quick an easy. Top that with a side of picky kids and you have a recipe for difficulty. Never Fear, this momma has a solution. Simple, easy, and everyone gets to have it their way…Pita Personal Pizzas!
With just three ingredients + toppings these pizzas are so simple a toddler could make them.
You just need pita bread, pizza sauce, cheese, and your fav pizza toppings. We kept it simple with plain ol’ pepperoni.

Preheat your oven to 350 degrees F and start creating.

Bake for 10 minutes and ta-da everyone has their own customized pizza!

He loves making his own pizza. We usually have a picnic in the living room floor when we have these. He loves having picnics. 🙂

These pizzas are a great way for the whole family to make dinner together!

Added bonus, these are low cal pizzas! You can eat your whole pita pizza for under 300 calories if you leave off the pepperonis and add some veggies instead. With pepperonis you’re still only at about 350 calories!

Black bean & Squash Tortilla Bake

Every week I try and make at least one new recipe. This week we are starting off with a recipe using squash, I’ve been craving some squash lately! This recipe is based on one by Mom Foodie..

What you need…
– Small Zuccini Squash
– Small Yellow Squash
– 1 packet if Hidden Valley Ranch seasoning mix
– 1 tbsp olive oil
– 1 1/4 cup low fat buttermilk
– 2 cups crushed tortilla chips (We used On The Border tortilla chips, they are so delicious and they are gluten free! I buy them in the big bag as Sams)
– 1 can of black beans, drained and rinsed
– 1 cup shredded cheese, divided
– Salsa for topping

The how-to:

Preheat that oven to 350 degrees

Slice the squash into thin disks and place them in a ziplock bag with 1 tbsp of olive oil and 1/3 of the ranch seasoning packet. Work the squash around to coat all the squash with the seasoning and set aside.

Spray a 2 quart casserole dish with non-stick cooking spary

Crush your tortilla chips, this would be a fun step for the little ones to help with!

Reserve 1/3 of a cup of the black beans and add the rest of the can to the chips and mix well. Once mixed pour in the casserole dish.

Whisk together the buttermilk and remaining ranch seasoning. When well combined pour that zesty deliciousness over the chips and beans.

Top with 1/2 cup of cheese

Arrange squash on top of the cheese alternating types of squash as desired

Top with reserved beans and then remaining 1/2 cup of cheese!

You’re probably thinking “man that looks tasty,” and you’re right!

Baked for 25 minutes!

Serve topped with your favorite salsa! I topped mine with Pain is Good Habanero Garlic Salsa, it’s hot hot hot but amazing! Mini Thor’s was topped with a locally made mild salsa.

He didn’t want to try it at first but when he finally did he said “mmm, actually good,” what a stinker!

No Prep Stir Fry

I’ve been craving Chinese food for daaaays, but I tend to eat my weight in egg rolls and rice if I hit the Buffett so instead I made one of my quick and easy low-cal favorites, No Prep Stir Fry! Two bags from the frozen food section, lite asian salad dressing, and some soy sauce, that’s all you need!

Ingredients:
1 bag Stir fry vegetables with noodles
1 bag California style vegetable blend
2 tbsp Kraft Lite Asian Toasted Sesame Dressing
2 tsp Soy Sauce

How-to:
– Add the bags of veggies to a heated skillet and stir in soy sauce
– Cook until noodles are done
– Stir in sesame dressing

That’s it!

Healthy, quick, and easy..that’s my favorite combo. I always keep these ingredients on hand for busy nights when I don’t have time to cook something elaborate….or when I get a hankering for Asian food 🙂

Super Simple Fried Rice (of awesomeness!)

Mini Thor is sick, again, so I needed something easy to fix for supper that I knew he would eat. He’s a picky one and it is hard enough to get him to eat when he is feeling good, let alone when he is not 100%. One thing he always loves is rice so I decided to whip up some super simple fried rice.

What you need…

– 2 packages if 90 second jasmine rice (I love love love 90 second rices!)
– Packet of fried rice seasoning
– 1 cup Broccoli Slaw (found in the produce section at Walmart)
– 1/2 onion, minced
– 1 tbsp minced garlic
– 1/4 cup chopped green onions, if desired.
– 2 tsp soy sauces
– 2 tbsp oil

Heat oil over medium heat in a large skillet and add the onion and garlic

Cook rice in microwave as per package directions

When onions are starting to caramelize add cooked rice and green onions if desired.

Mix well and then add soy sauce and seasoning packet and stir until completely mixed

Add broccoli slaw and mix together and remove from heat.

This is a simple, tasty meal in just a few minutes. Mini Thor approved and ate his whole bowl full! I had two bowls and there was still a little leftover so this would be a good meal for a small family or could be used as a side dish.
