Cut-out Cake Cookies

We love love love making cookies at my house.  Mini Thor particularly loves the decorating, his granmomma says he “likes a little cookie with his icing.”  We made lots of cookies over the holiday season but cut-out cookies don’t have to be just for Christmas (although we use our Christmas cookie cutters year-round, Mini Thor likes to make snowmen).  I found this amazing cut-out cookie recipe at GOODEness Gracious that starts with a box of cake mix.  I love recipes that let you cheat like that!  We also gave Duncan Hines Frosting Creations a try, I normally avoid things with artificial colors but seriously how to you resist making cotton candy icing?!?!  Here’s the how-to for these easy, fun cookies:

Ingredients:

  • 100_7675Cake Mix (we used Funfetti)
  • Two Eggs
  • 1 Stick of Butter, Softened
  • 1 tsp of Vanilla Extract
  • Icing & Sprinkles of your choice for decorating after your cookies cool (optional)

Mix all that goodness together until completely mixed.  Then, let it chill in the fridge for 2 hours (or so).  100_7701Roll out the dough on a flour coated surface.   Preheat the oven to 350 degrees Cut out those cookies!!!100_7704

Try to resist eating the cookie dough, tee hee, little man couldn’t! Place the cookies on a greased cookie sheet and bake for 12-15 minutes. Cook on a wire rack and then DECORATE! 100_7715We used cotton candy icing as a base and then Mini Thor added blue sugar cookie icing. Sprinkles are optional, but totally add to the fun factor! 100_7718This cookie adventure was totally worth the mess!  After all, the bigger the mess the bigger the adventure right?!
